Peanutbutter Bread and Corn Fritter Bread

Hi - Guess you all know what I've been doing--yep...making bread. Here are the two latest. My friends' grandkids really loved the peanutbutter bread. Sounds wierd, but it was great.

Peanut Butter Bread
Large Loaf

1-1/4 c warm water
3 c white bread flour
1/4 c brown sugar
1/2 tsp salt
1/2 c peanut butter (I used Jif creamy. You could also use the low fat version)
2 tsp fast rise yeast
O R
3 tsp active dry yeast

Can use delayed, rapid or reg cycles.

It rises really high.

The Corn Fritter Bread recipe calls for canned corn. Most of it gets pretty mashed up when the loaf is done, but I'm wondering if we can substitute creamed corn instead. Heather, any comments?

Here's the recipe for the Regular Size Loaf. BTW, I tasted a piece plain today. I think this could be a good recipe for making dough in the bread machine, then forming into rolls and baking in the oven. The flavor of the bread reminded me of one of those good dinner rolls you get at a restaurant, the kind that are very slighly sweet (almost like a honey wheat bread). I'm going to play around with this (eventually! LOL).

Regular Loaf
