Hi, I posted this question on the recipe board but since I need help fast I thought I'd ask here too.I want to cook some catfish tonight,w/out a lot of mess.Thinking the grill outside is the easiest,does anyone have any ideas?Thanks,Suzy

I am from the south and I grew up on catfish, so I have some ideas!
My favorite way to eat it that is IBS friendly would be to make a coating for the fish and then bake it in the oven.
There are 3 main steps: 1.) Make a coating: Mix flour, bread or cracker crumbs, and some cajun seasoning. Quantities don't really matter, just include about equal amounts of flour and crumbs.
2.) Liquid to have the coating stick: Take about 3/4cup of soy milk and one egg, and lightly whisk it with a fork.
3.) Dredge the fish in the milk mixture, and then into the flour mixture.
4.) Bake in the oven at 350 until they are white all the way thru, usually takes about 12 min.
If you have a butter type spread, you can melt that and drizzle it over the fillets.

Put the catfish fillets into a big dish and pour salad dressing on them. Whatever kind of salad dressing you have (italian, french, ranch, raspberry vinaigrette) will be okay. Honey mustard is excellent. Bleu cheese might be weird.
Marinate the catfish in that for about an hour, maybe two. Take it out and put it on the grill and figure about 5 minutes on each side, depending on the heat of your grill. Brush it with honey and sprinkle with black pepper about a minute before you take it off the grill.
Put some sliced vegetables (anaheim chiles, yellow onions, squash, firm tomatoes) on the grill with the fish and brush them with the marinade.
