I'm making up for the BAD chicken/potato recipe...

Hi everybody - I want to apologize again for the chicken with potato crust not being too good. To make up for that, this one's great. I've had it many times and it always turns out good.
4 half chicken breasts, w/or w/o bones and skinned 1 bottle fruit chutney (or use one of Heather's recipes) 4 tsp Dijon mustard 1.5 tsp dried thyme
Sprinkle chicken breasts with s/p, onion powder and garlic powder.
Mix mustard, thyme and chutney together in small bowl. Spread all over top and bottom and sides of chicken breasts. Place chicken on rack over shallow pan and put in 375 oven for 30-40 minutes. Put enough water in pan so drippings will not burn.
These comes out tender and juicy. If you don't want to use chutney, you can use any kind of preserves (peach, apricot, quince, etc.) and they'll come out just as good. The chutney gives it a little kick, since most chutney's have jalapeno pepper--not much--in them.

Hi Sharon, I made it and it was really nice. My husband loved it too. When he got home from work and came in the door he even said "something smells great!"
It was really quick to prepare which is good. I used mango chutney from a jar.
Anyone who hasn't tried it should!

I made this last night for dinner. Just had leftovers for dinner tonight. WOW! Amazing. It really did stay nice and juicy. I used mango chutney. YUM!!!

I made this recipe last night for dinner and it was wonderful. I used peach preserves because my husband claims that he does not like chutney. Even my two-year-old son liked it. I served it with baked potatoes and the cornbread from Heather's book. Thank you so much for the recipe it is nice to have some variety in my diet finally!
