Ruchie - You just won't believe what I just found in a wt watchers cookbook while I was looking up something? Yeperoo--

QUINOA, RICE AND CARROT FRITTERS

Remember to rinse quinoa grains thoroughly under cold running water for 1 to 2 min before cooking to remove the bitter outer coating.

2 c veg broth
1/2 c quinoa, rinsed and drained
1/2 c long grain white rice
2 tsp canola oil
1 onion finely chopped
2 carrots shredded
2 egg substitutes or 2 whites, beaten
3 tbsp all purp flour
2 tsp ground flax seeds
1/2 tsp salt
1/2 tsp fresh ground pepper

1. Bring broth to boil in med saucepan. Add quinoa and rice. Reduce heat and simmer covered 15 min. Uncover and simmer until all liq is absorbed, about 5 min.

2. Heat 1 tsp oil in lg nonstick skillet and add onion. Saute until translucent 3-5 min.

3. Combine the carrots, eggs, flour, flax seeds, s&p in med bowl. Add cooked quinoa rice mixture and sauteed onions and mix well.

4. Heat remaining 1 tsp oil on nonstick griddle or in lg nonstick skillet. Drop the batter onto griddle in 1/4 c measures, 4-6 fritters at a time. Cook until golden, about 3 min each side.

Per serv = 4 fritters 284 ca.

Does anyone know how to replace the all purpose flour in this recipe? I'm not eating any gluten at the moment....please help gluten free friends *hugs* Thanks!

It's only 3 T. What do you have on hand, rice flour, potato starch flour, tapioca, corn starch? Use any of those or a combination...I'd probably use a little of all that I had sitting around, or if you have a GF pancake mix (unsweetened and DF) use that.
Thanks for bumping this up. Looks good. I made quinoa/carrot stuffed red bell peppers last night...just winged it, no recipe .
