CHICKEN BURRITOS - Make a bunch & freeze for easy lunches

CHICKEN BURRITOS

Fat Free Tortilla

1 or 2 TBSP Black Bean Dip (Trader Joes or Heathers recipe)

Rice (substitute 1/4cup salsa for part of the water)

2 oz. Chicken Breast diced up (I use grilled chili/lime strips from Costco) but any should work fine

1/4 oz. Soy cheddar

I usually set up an assembly line and make a bunch at one time. I wrap each one tightly in foil and freeze them. They make a perfect lunch to take to work.

ONLY 4 Grams of fat each !!!

These sound so good! And I love the freezing idea.

How would you make these after they're frozen? Pop them in the microwave while still frozen?

They are best if you defrost them or at least partially. If I'm taking one to work I take it out of the freezer the night before and put it in the fridge. (Although I'm sure the would be fine right from the freezer to microwave)

When it's time to eat I take off the foil and put it in the microwave for about 1 1/2 minutes.
