Hey Everyone,
I was wondering, are the scalloped potatoes you can buy pre-packaged at the grocery store IBS-Safe? Or is it better to make them yourself at home? If so, could anyone post directions on how to make your own scalloped potatoes, got a craving but wouldn't even know where to begin
Thanks!
Kelly

Kelly, I found this online and adapted it slightly. It certainly looks safe and yummy!

Low-Fat Scalloped Potatoes

Serving Size: 6

4 Med Potatoes
1 1/2 Cups soy milk
2 Tbsp Flour
1/2 tsp Salt
1/4 tsp Garlic Powder
1/4 tsp Cayenne Pepper (optional)
1/2 Cup chopped Onion
1/2 Cup shredded Cheddar soy Cheese, optional

Peel and slice potatoes thinly. In a saucepan, combine soy milk, flour, salt, garlic powder and cayenne pepper and cook over med heat until sauce thickens. Add onions to sauce. Layer casserole dish with potato slices. Spoon half of sauce over slices and repeat with remaining potatoes and sauce. Cover and bake in oven preheated at 350 deg F. for 65 min.

Optional: Remove from oven and sprinkle with cheddar soy cheese.
