Italian Chicken and Potatoes (Crockpot!)

Italian Chicken and Potatoes
(Makes 6-8 servings)

This is a perfect meal for people who like Crockpot cooking. It's easy to throw together and turns out tender and flavorful!

Ingredients:
6 boneless, skinless chicken breasts (6 large or up to 8 small)
1 cup bottled fat-free Italian salad dressing
2 teaspoons italian seasoning, divided (I use 1 tsp each basil and oregano)
1 cup grated parmesan soy cheese
8 medium potatoes, peeled and cut into wedges

1. Place chicken in bottom of large crockpot.
2. Sprinkle with half of the Italian dressing, 1 tsp of the Italian seasoning, and half of the soy cheese.
3. Place the potatoes on and around the chicken.
4. Sprinkle with the remaining dressing, seasoning and soy cheese.
5. Cook on high 6-8 hours, or until the chicken and potatoes are tender (I think it would be fine with anything over 5).

Hi Kree!

I like Crockpot cooking and would very much like to try the Italian chicken recipe you have posted. However, I can't tolerate Italian salad dressing, or any bottled dressing for that matter, because of the additives. I also can't tolerate soy cheese because of the casein.

Would you be able to suggest some substitute ingredients for the salad dressing and soy cheese? For example, could I make my own Italian salad dressing? If so, what ingredients would I need?

Here is just one that I've seen.... there are lots of them out there. Can you handle dry mustard? If so, let me know and I'll post that one too.

ITALIAN SALAD DRESSING

6 tbsp. olive oil
1 lg. clove garlic, crushed
2 tbsp. wine vinegar
Juice of 1/2 lemon
1 tsp. salt
1 tsp. freshly ground pepper
1/4 tsp. crushed oregano

Put all ingredients in a jar and shake well.

Thank you! This dressing sounds good! No, unfortunately mustard is something I can't have.

Thank you again! I'm not sure, though, if these products are available here in Canada. I haven't noticed them in the health food store, but I will inquire when I go to the store next.

Hi Belinda, Shell's right about the vegan soy cheese. That's the kind I use and it doesn't contain any casein. I'm not so sure about subbing that dressing, though. That recipe has a lot of olive oil in it, so using a cup of it on the chicken would make it awfully high in fat. Here's one I found online that's fat free. It also uses mustard, but you can try it without that and see how it tastes!

No-Fat Italian Dressing

1/4 cup lemon juice
1/4 cup cider vinegar
1/4 cup unsweetened apple juice
1/2 tsp oregano
1/2 tsp dry mustard
1/2 tsp onion powder
1/2 tsp basil
1/8 tsp thyme
1/8 tsp rosemary
1 cl garlic, sliced

Combine all ingredients. Chill for at least an hour or two to allow herbs to blend. Remove garlic clove pieces before serving.

Calories: 9 (2 tablespoons) Fat: 0 gm 0% fat
