Has anyone out there found a way to make an IBS-safe Hollandaise sauce? Not even sure if there would be a way to do this because Hollandaise is soooo fatty, but I love it and miss it very much. Any ideas for substitutes would be great!
Thanks,
Kelly

Hmmm...not sure that's possible! I love Hollandaise too and I just can't resist when my brother makes it. However...making it with soy spread, not butter would help - at least then you'd avoid the dairy!

Hi Kelly, I found this one online (and modified it slightly to make it IBS safe, of course). I haven't tried it, but it looks decent!

Low Fat Hollandaise Sauce

Ingredients:
1-1/2 Tablespoons cornstarch
1/2 teaspoon dry mustard
2/3 cup soy milk
2 Tablespoons egg substitute
2-1/2 Tablespoons fresh lemon juice
2 teaspoons soy margarine
1/8 teaspoon salt

Instructions:
Combine cornstarch and mustard in a 2-cup glass measure. Gradually add soy milk and egg substitute, blending with a wire whisk. Microwave at HIGH 1 minute; stir well. Microwave at HIGH an additional 1-1/2 minutes or until thickened, stirring every 30 seconds. Add lemon juice, margarine, and salt; stir with a wire whisk.

Yield: 1 cup (serving size: 1 tablespoon).

Thanks for that! I'll have to get it a try and let you know how it turns out. Just one question, where it says egg substitute...does that just mean egg whites? Or would it be something else?
Thanks!

Egg substitute means something like Egg Beaters. If you're using egg whites I'd use just one, since 1/4 cup egg substitute is 2 egg whites!
