Since the strawberries are coming into season now, does anyone have an ibs safe recipe for strawberry shortcake?

Try using angel food cake instead of shortcake. Then just take fresh strawberries, chop them up, sprinkle with a little sugar and fresh orange juice, and let them sit for about 30 minutes until juicy. Put a spoonful or two of the berries with juice over a piece of cake. Yum!

I just finally tried this - OMG, it was so good! I didn't have any OJ, so I just used the sugar. Strawberries were on sale this week so I got tons of 'em (1/2 flat! ), so I thought it'd be a good time to finally try this.

I am so glad I did. Very easy, to die for, and pretty! Would be awesome for company, maybe garnished with fresh mint?

Sounds wonderful! Great idea for the mint too Mags. I'll have to see what strawberry prices are like at the store.

Another strawberry idea. I am Italian and my Mom would slice strawberries and then pour a little red wine over them. She would then put them into the fridge and let the juices mingle with the wine. Delicious with homemade biscotti. Also, balsamic vinegar sprinkled over sliced strawberries is wonderful.

1.Use your favorite safe white bread or biscuit -- or angel food cake! (shortcake usually contains egg and/or oil)
2.Ask your local bakery manager to make you some shortcake or biscuit or cake recipe without whatever it is you can't eat (e.g. dairy or egg or oil)
3. Slice the fresh strawberries into a bowl, dust lightly with white or brown sugar, stir gently, let them rest in the bowl at least an hour or overnight.
4. Try yogurt or soy substitute instead of whipped cream if you can't do dairy.

Shell - did you ever find some? I wanted to let you know, I thought this was good the other day, but if you let the strawberries sit overnight, they're even better. Wouldn't have thought it was possible but it's true!

They're on sale this week at my local grocery store - 1/2 flat (or 6 pints) for $4. They're from California though, so maybe you can find some in WA since CA is closer to you!
