Shell's Review : SO EASY, very moist.... perfect combo with the pineapple.... tastes like MORE!! I think I've gonna try it next time with the canned mandarin oranges and chop them up before mixing them in.

Instead of the pineapple or other fruit, could you add cocoa to the cake mix and end up with a mock-chocolate cake?

re: Bevrs question about using cocoa ,,,,,, a 19-oz can of crushed pineapple just doesn't equal cocoa powder no matter how you cut it. We can all have chocolate dreams, though .....

I haven't tried this, but if I was going to, I'd take a cup of coconut and stir it up with a quarter cup of [soy] yogurt and 4 squares of melted semi-sweet chocolate and a tablespoon of cherry or cranberry juice as a substitute for the pineapple can.

If any of you are brave enough to try this, let me know how it turns out.

Bevrs... I think you should be able to add cocoa to the cake mix in addition to the other ingredients called for on the box. I'm not sure how much. Maybe 2 tbls? And since there is already sugar (it is a sweet cake) I don't think you would have to add anymore sugar? Can anyone else help with this one?

P.S. After thought as well..... IF you can tolerate this....you could prepare some instant coffee or espresso powder make sure it is cool and use it in place of some of the water called for on the box!

OH, whoops, thanks Shell, I thought she meant cocoa INSTEAD OF the pineapple!! [doh]

Pineapple and chocolate don't do much for me as a combination, but I'll bet you could use a nice can of CHERRIES and add 2 tbsp. of cocoa and get a nice cake.

I made this cake today and I just wanted to let you know that if you make it and use the muffin tins be sure and line them with the little paper cups or else you will have a heck of a time getting them out of the pan. I did some with and some without. They are really good and my husband will be able to take them in his lunch. He is the one with IBS in our family. I have had him on Heather's diet for a little over a month and he has had one episode and that was due to over eating. Until he started the diet he was having 3 or 4 attacks a week and was miserable. Thanks Heather, you are really a blessing.

Thanks, Shell. I think I'm gonna try it with the unsweetened cocoa; I'll add it to the dry flour mix (not the egg white mix) before sprinkling over the whipped egg whites. Sounds really yummy.

And great idea about the instant coffee! You're a very clever lady, Girlfriend.

I made this yesterday and it was wonderful. My hubby even liked it and he usually turns his nose up at the heathly desserts I make.

oh my....its in the oven now and smells heavenly! i'm a tiny bit worried tho cuz we did 2 dozen cupcakes AND had enough for a loaf pan too!
my house smells so yummy. if this worked we're going to try the chocolate /cherry version
