Greek inspired Cold Pasta Salad

This is my own original creation. I used to use some commercial salad dressing -which was of course full of fat and real feta. So, I concocted my own dressing which is much lower in fat and tastes great! I fed this one to my whole family and never did tell them that it was soy feta. Hee hee!
4 cups uncooked pasta (I like penne)
2 - 3 cups fresh vegetables (such as tomatoes, onion, olives, peppers, etc.)
1/2 cup soy feta
Dressing:
1/3 cup water
1/4 cup red wine vinegar
2 - 3 tablespoons oil (canola or olive)
1 tablespoon lemon juice
1 tablespoon white sugar
1/4 teaspoon EACH of: garlic powder, basil, thyme
1/2 teaspoon EACH of: onion powder, parsley
1 teaspoon (or more) oregano
Cook pasta until tender. Finely chop vegetables and crumble feta. (NOTE: if you have trouble with fresh veggies, roasting them in the oven softens them and adds a nice flavour) Mix dressing in a jar with a tight lid. Shake vigorously and pour over salad. Mix well. It tastes better if it has a few hours or overnight to sit and "blend."
PS- this pasta keeps well for several days in the fridge and makes yummy quick lunhes and is a hit at parties!

Hi - Did you buy the soy feta or make it? I've seen recipes where you pickle firm tofu to make a soy feta (which sounds fabulous but I haven't tried it). But I haven't seen commercial soy feta - is there a good brand?

Yes, it's real Soy Feta. It's made in the Okanagan Valley in the Canadian Rockies. Try the website: okcheese.com I don't know if you can get it in the states or not. I've had great luck with Okanagan's soy parmesan, mozzarella and cheddar as well. It's a good company.
