Acorn Squash a la Kree
(Makes 4 servings)

This is a favorite in my house. My mom has been making it for as long as I can remember, so I decided it was finally time to write it down. I think the amounts of margarine are safe fat-wise, but if it bothers you feel free to use a little less.

Ingredients:
2 acorn squash
8 teaspoons soy margarine
4 Tablespoons brown sugar (or to taste- I've never actually measured it!)
salt and pepper

1. Cut the squash in half and remove the seeds and stringy parts.
2. Place them cut-side-up in a microwave-safe baking dish (You may need to cut a tiny wedge out of the bottom so they'll sit up straight).
3. Place 2 tsp (about 2/3 Tbsp) margarine into each squash cavity and sprinkle with approximately 1 Tbsp brown sugar (you can use more or less to taste).
4. Salt and pepper to taste.
5. Cover the entire dish with plastic wrap and microwave it on HIGH for 13-16 minutes or until the squash are tender when poked with a fork.
6. Remove the plastic wrap and let them cool for at least 5 minutes before serving.

Note: You can also experiment with adding additional spices. It's great sprinkled with cinnamon!

As far as I know all kinds of squash are safe. Personally, I've only had acorn, butternut, zucchini, and yellow, but that's just because that's what my family likes. On Heather's list of soluble fiber foods it says "squash and pumpkins", so I'd guess they're all fine!

Hi Kree, I was reading your recipe for Acorn Squash a la Kree and would like to know what is the name of the soy margarine you use? The recipe looks good and I want to try it. Have a great day!
