Irish Soda Bread

St. Patrick's Day is in less than a month, so I thought I'd post this before I forget! This recipe comes from my college roommate, Becky, who belongs to a very Irish family! I like it because it's much sweeter than most soda breads.
Ceta's Irish Soda Bread (Makes 1 9x13-inch pan)
Ingredients: 4 cups flour 1 cup sugar 1/4 cup dairy-free margarine, melted 4 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 4 egg whites or 1/2 cup Egg Beaters 1 cup raisin 1 pint soy "buttermilk" (Place 2 Tbsp lemon juice or vinegar in a 2 cup measuring cup and fill it up with soy milk until you have 2 cups--let sit about 10 minutes)
1. Beat egg whites. 2. Add all ingredients except soy buttermilk; mix. 3. Add soy buttermilk; mix. 4. Pour batter into a 9x13-inch pan. 5. Bake at 350 degrees for 40-60 minutes, or until a toothpick inserted in the center tests clean.
