Hi, All.

I'm looking for a recipe for some Afghani rice I had in a restaurant. It's a basmati rice with amazing seasonings (cardamom, cinnamon and nutmeg. It's apparently similar to pillau (an Indian rice), which I've never had.

I'm a good cook, but thought I'd check for a recipe before I attempt to concoct it myself! It'll save time.

Indian recipe - Saffron Chicken Pullao new

Hey, not sure if this is similar to what you are looking for (no nutmeg)..but I've had this and it is good.

2 cups long-grain rice (I use basmati..mmmm)
4 Tbsp Oil (this could and should probably be reduced to 2 Tbsp)
1/2 tsp powdered saffron
1 cinnamon stick (broken)
3 cloves (whole)
2 cardamoms (lightly crushed)
2 TBSP sultanas (raisins)
2 TBSP blanched almonds (raisins and almonds can be reduced if these are severe triggers for you)
300 g diced skinless chicken breast


In a large pan/pot, stir the rice in half the oil until coated. Add saffron and spices and pour in 3 cups cold water. Cover and bring to a boil, then reduce heat to lowest point and cook without removing the lid for 20 minutes.
Cook the sultanas, almonds and diced chicken in the remaining oil. Then stir into rice and let sit 5 minutes before serving.

BASMATI CURRIED RICE

2 c. basmati rice
3 c. water
1/3 c. olive oil
1 heaping tbsp. curry powder
1 tsp. ground cumin
1/2 tsp. ground nutmeg
1/2 tsp. ground cardamom
2 tsp. tamari
Juice of 1/2 lemon
In large flameproof casserole combine rice and water and generous pinch of salt.

Bring water and generous pinch of salt to a boil. Add rice and cover. Cook until tender, 12-20 minutes, until water is absorbed. Transfer rice to large bowl.

Heat olive oil in skillet and add curry powder, cumin, nutmeg and cardamom. Cook over low heat for 1 minute to mellow spices. Pour mixture over rice and add tamari and lemon juice.

This rice is excellent with a salsa of fresh tomatoes, scallions and lots of chopped fresh cilantro mixed with basalmic vinegar and olive oil.

Those both sound so good! Shell, I'm just curious, where do you find tamari? I've never cooked with it before and I'd be interested in trying it.

You SHOULD be able to find it in your grocery store near the soy sauce. If not, I'm sure the health food stores have it.
