Okay, you all HAVE to try this recipe! It is SO good! It made enough for two meals for the two of us and I am actually looking forward to eating the leftovers--and I HATE leftovers! Enjoy! Oh, and I couldn't find orzo (it's a tiny rice-shaped pasta and one of my favorites) at Wal-Mart, so I just used elbow macaroni instead. Try Barilla brand, it doesn't get mushy when you cook it.

Chicken and Artichokes

1/4 cup olive oil
1/4 cup fresh lemon juice
2 tablespoons honey
2 teaspoons garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
4 boneless, skinless chicken breast halves
1 13.75-ounce can whole artichoke hearts, drained, halved
1 lemon, peeled, thinly sliced
Cooked orzo (about 1/2 pound)
Chopped fresh parsley

Combine the oil, lemon juice, honey, garlic, thyme, salt, and pepper flakes in a small bowl for the dressing. Season chicken breasts with salt and black pepper. Saute in 2 tablespoons olive oil in a large saute pan coated with nonstick cooking spray. Cook over medium-high heat until lightly browned on both sides, 3-5 minutes per side. Reduce heat to medium, cover, and cook 5 minutes. Add artichokes and dressing. Simmer and reduce about 3 minutes. Top chicken with slices of lemon; cook 2 minutes, or until dressing thickens. Serve over cooked orzo. Garnish with chopped fresh parsley. Makes 4 servings.

Hey! Thanks for reminding me to pull my chicken out of the freezer! I printed this last night, and I'm going to try it tomorrow night. I just ran down & pulled it out after reading your post...lol

I made this last night and it was the so good!!!!! I hate leftovers, more than life itself... but I brought it for lunch today! You have to try this!

And I can barely cook! Who hoo!

In fact, I'm eating it right now... reheated.

I didn't use orzo though... instead I cooked up some linguini and served it over that. The red pepper flakes make it quite spicy, but it's still very yummy!

I substituted half chicken broth and half water from the canned artichokes for the 1/4 cup of olive oil in the dressing. I also used only 1 Tablespoon of olive oil to saute the chicken - it was plenty. I reduced the crushed red pepper flakes to 1/8 teaspoon and it was still plenty zingy. Oh, and I didn't peel the lemon - just sliced it thin - that made the recipe not only yummy but super-quick. I served it over spaghetti - man, this is good!

I've made this so many times now and everytime it's so good. Some changes I make:
-3tbsp of oil instead of 4
-no thyme (I always forget)
-no salt (the artichokes add a salty enough taste for me)
-no lemon slices unless company is over
-cut up the chicken into small 1/2 inch cubes, throw in chicken, artichokes and dressing and simmer about 10 mins open in the pan until chicken is cooked

So good! And I have leftovers for tomorrow

Is that 2 T for the dressing and 2 T for the sauteeing? Or 1/4 cup for the dressing...plus 2 more for the sauteeing?

Has anyone tried to freeze this? thanks Oh, do the artichokes come in oil or water? Which one should I get?
