IBS-friendly pie crust

Hi!

I recently found out about this recipe and I was so excited about being able to eat pies again!!

You need:

2 cups Kamut flour
1/4 teaspoon salt
1 teaspoon baking powder

Mix all this together, then,
in an empty cup, put 1/3 cup canola oil (soy and carthame oil also work) and 2/3 cup cold water. Mix that with a fork and then add it into the flour mix.

Make a ball with the dough and let it stand in room temperature for 15 minutes.

After, put the ball in between two sheets of Saran wrap and roll it.

This afternoon, I made small salmon pies for future lunches. I also made an apple pie which I can't wait to eat!!

The crust is a little dry but hey!!! who cares!! it's SO safe!!
