Split pea soup

Is split pea soup o.k. if it doesn't have dairy or a lot of fat? Also, has anyone tried jello pudding mix with soy milk? Finally, has anyone tried the mori nu low fat pudding mix? You mix it with tofu, and it is pretty good-really creamy!

Joan, honey, I don't think the Jello is okay for us. I asked Heather this, and as I recall it's a no-no because of the preservatives and food colorings.

I don't know about the split pea soup, except I'm pretty sure it has pork in it. For me, that's DEFINITELY a no-no.

As for the Mori-Nu, well, with tofu -- that sounds like you got yourself a keeper there! YUMMY!

If you make the split pea soup without pork, it should be just fine - especially if served with rice or bread or a bit of extra soluble fiber. Make sure you cook it down till the peas are totally disintegrated, or puree the soup in a blender.
