This is a very old Weight Watcher's recipe that I used to make all the time when I was on Weights Watchers a hundred years ago -- and still do. It's absolutely incredible.

LINGUINE PESTO

1 tablespon olive oil
1 garlic clove, minced
Several tablespoons chopped FRESH basil, the more the better (no dried!)
1-1/2 cups COOKED linguine
1/2 teaspoon salt
Dash freshly ground pepper
2 tablespoons grated soy parmesan
Pine nuts, chopped (OPTIONAL)

In small skillet heat oil; add garlic and saute for about 1 minute. Remove from heat and add basil. In bowl, combine linguine with basil mixture and toss well; season with salt and pepper, and sprinkle with cheese (and ground pine nuts, if using).

Makes 2 servings.

Oh, this sounds sooooo good!! I'll make this in the summer and also throw some shrimp on the bbq to go with it
