Lemon Bread

Another great recipe I forgot to share! My mom made this a few weeks ago (after consulting me about substitutions, because she's wonderful ). We froze the extras and have been munching on them ever since. I love the flavor! The recipe calls what you pour over the top a "glaze", but it's really more liquidy and it totally sinks into the bread. Mmm. It's even better the second day... and the third, and the fourth. Lol.

Lemon Bread
(Makes 2 loaves)

BREAD
1 2/3 cups all-purpose flour
2 teaspoons baking powder
1 pinch salt
1 1/2 cups granulated sugar
2 lemon, rind of (grated)
1/2 cup cooking oil
1/2 cup unsweetened applesauce
1 1/2 cups Egg Beaters or 12 egg whites (yes, that much!)
1/2 cup finely chopped walnuts

GLAZE
1/3 cup granulated sugar (not confectioners)
1/4 cup fresh lemon juice (from the lemons you used for the rind)

1. Preheat oven to 300 degrees.
2. Grease/flour 2 standard loaf pans.
3. In a mixing bowl sift together flour, baking powder and salt.
4. In another large mixing bowl combine sugar and lemon rind.
5. Then add oil and applesauce and 1/4 cup Egg Beaters (2 egg whites) at a time, beating well after adding each addition.
6. Add flour mixture and nuts.
7. Divide between the two prepared loaf pans.
8. Bake one hour.
9. While bread is baking prepare the glaze by thoroughly mixing the sugar and lemon juice.
10. Pour glaze over bread as soon as you take it from the oven.
11. Leave loaves in pans overnight.

Kree this sounds yummy..actually this sounds a lot like Heather's Lemon glazed sticky bread. (EFI book) I'll have to try this one. Heathers is really good too.

Does this come out kind of like a pound cake?


Thanks for the recipe. I think I'll go make some today! Have everything for it

Whoops, I totally forgot there was a lemon bread in Heather's cookbook! I'll have to check that more carefully before I post a near-clone. This is the second time I've done that!

And I'm not sure if I'd call it a pound cake, b/c I don't really know what those are like, but it definitely has a different texture and a more eggy taste.

oh Kree that's ok. I bet it different. Theres more eggs in yours and applesauce...a few different things! I'm still going to try it.

Pound cake is just like a loaf of bread but it's the texture that's different....gosh it's hard to explain!!

Ok so what king of cooking oil? Canola? and I was wondering if I could use half Egg Beaters and the other half egg whites. And you leave them in the pans over night? Do you cover them at all? The next day do you store it in the big zip lock bags? Sorry for all the questions!

That's okay! Let's see if I can answer all these...

1. I always use regular vegetable oil because I'm fine with that, but I know Heather always advocates using canola oil, so I think it would be fine with either.
2. I'm sure using 1/2 Egg Beaters and 1/2 egg whites would be fine since egg beaters are 99% egg whites anyway.
3. We leave ours uncovered, but put them in the microwave so the cat doesn't eat them.
4. Yep, we store ours in ziploc bags! Actually, we wrapped one in foil and then put it in a ziploc bag and froze it, and it tasted just as good when we defrosted it.

I can't imagine that anyone is a bigger food thief than my dog Fred. He is such a terrible pig, but still manages to stay thin. I can't believe the stuff he manages to get, so I can relate to the cat problem!

Thank you very much Kree! Its funny when ever I make something that I've never made before I always have lots of questions!!! You would think I couldn't cook or bake! I call my mom 5 times when I making one of her dishes!!

Thats to funny about the cat..I think mine would do the same!
