CHICKEN PARMESAN NOODLE BAKE

Hi y'all - got this recipe off the can of Del Monte Spaghetti Sauce:

CHICKEN PARMESAN NOODLE BAKE

4 skinless boneless chicken breast halves
1 pg (12 oz) non-eggyolk wide noodles
1 can (26-1/2 oz.) mushroom spaghetti sauce or similar with no fat (Healthy Choice makes it I think)
1 c (4 oz.) shredded soy mozzarella cheese
1/4 (1 oz.) soy parmesan cheese grated

1. Preheat oven to 45o. Season chicken w/s & P. Arrange chicken in 11x8 in baking dish. Bake uncovered 20 min or until chicken is done. Drain, remove chicken from dish and keep warm.

2. Cook noodles according to directions on pkg. Drain. Reserve 1 c spaghetti sauce and toss noodles with the remainder. Place in baking dish. Top w/chicken. Pour reserved sauce over chicken and sprinkle w/cheeses.

3. Bake 10 minutes or until heated thru and cheeses are melted. Sprinkle with chopped parsley if desired.

Prep and cook time: 40 min.,
4 servings

can you recommend a soy cheese that doesnt taste like rubber? i've tried some and my family says they have an after taste. im new to this so i'm trying to learn. thanks, sandra

I've had good luck with Lisanatti products. They make both soy and almond cheeses.

Some of the Galaxy stuff is okay, but I stay far, far away from their cheddar.

Oh yeah, Snorkie is so right! I've been eating Lisanatti rice mozzarella with tomatoes and basil (safe Salad Caprese!), and I swear I couldn't tell the difference between that and supermarket mozzarella. I like Soya Kaas cheddar, too, for stuff like tuna melts.

How funny, I love the Galaxy Veggie Shreds cheddar. I guess it's all about personal taste. As for parmesan, I love Soymage vegan parm.

This is the only brand I have found that taste good and melts! Soy Sation by Lisanatti.

I live in Michigan and the only place that I have found that carries Soy station is Trader Joe's. And they only have the mixed one which is chedder, mozzerlla and I think colby? I have asked several stores to carry this instead of Veggie Shreds but no one has bothered to do that yet!
