This was on the Newsletter that came with our monthly statement from our gym and claims to be "healthy and packed with flavor." I don't care for mashed potatoes, but if I did I think I'd like this recipe. It calls for buttermilk*, so we need to do a substitution. (Heather - vinegar + soy milk?)

6 lg. peeled Idaho potatoes (approx. 6 cups)
10 garlic cloves
1 bay leaf
1 teaspoon salt
1/4 cup to 1 cup buttermilk *
Salt and pepper to taste

In lg. pot, combine the potatoes, garlic cloves, bay leaf and salt with just enough water to cover. Cover the pot, bring to a boil, then lower the heat and simmer for 15-20 minutes, or until the potatoes are tender. Drain. Discard the bay leaf. Using a potato masher, mash the potatoes and garlic with enough buttermilk* to achieve a smooth consistency. Add salt and pepper to taste.

Yup - you can use vinegar & soy milk for the buttermilk.

Couldn't you also use a thinned down soy yogurt?

Not that I use soy anything, but it's just a thought for those that do.

Another variation is to use chicken broth instead of the soy milk. It gives it a really nice flavor, it's low in fat, and still appeals to family members who can't stand soy!

1T cider vinegar to 1 Cup soy milk, just enough to "sour" it.
