I was so starving for something different than the roasted chicken I eat everyday....so I went looking on the www and found this awesome recipe. I was leary but it was absolutely delicious! Even my husband and my Mom loved them (they had them as appetizers before there Porterhouse steaks )
3/4pd of organic grass fed chicken tenders 2 1/2 c corn flakes (i use organic) 3 egg whites 1T of water McCormich mediteranean (sp) seasoning
1-Preheat oven to 400. Wash and pat dry chicken. Whisk together egg whites and water. Crush cornflakes in a large bowl. 2t of med seasoning.
2-spray bottom of broiler pan with cooking spray (i used a broiler pan so the bottom would get crunchy.) Dip dried chicken in egg whites, then cornflake mixture, lay flat on broiler pan. Repeat with all pieces.
3-Spray top of chicken with cooking spray.
4-Bake for 30 min, tuen pieces over, bake for another 10 min or until underside is crunchy.
