Will's Dreamy Lemon Rice Pudding

In this recipe Heather says to "Add rice and cook, whisking frequently without scraping the bottom of the pan." and to use a metal whisk. Why should I not scrape the bottom of the pan and if I do will it ruin the recipe? I have non-stick cook ware, so do I HAVE to use a metal whisk?

I have a flexible rubbery whisk that I use when I make polenta in my non-stick pans. Then it doesn't matter if you scrape the bottom or not, it won't damage the coating.

I assume the directive to not touch the bottom is just because the coating is so delicate, not because it will affect the pudding.

I got my whisk at Target for less than $10.
