Banana Bread

I posted this for Ruthie in the diet forum ... here is a copy of my post to her:

Ruchie: Here is how I make my banana bread -- keep in mind that i can eat wheat and oats... i also use two eggs b/c two eggs in a huge loaf of bread doesn't affect me... yes, i use sugar.

1 1/2 c whole wheat flour
1 heaping cup quick oats
1/4 c + 2 T brown sugar
1/4 c + 2 T white sugar
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt

MIX WELL!

2 large or 3 medium bananas, well mashed
1/4 c extra virgin olive oil (I use colavita)
1/2 c applesauce
2 large eggs
1 T vanilla

MIX WELL!

Add wet ingredients to dry ingredients until well combined.

Mix in 1/2 to 1 c of chopped pecans.

Pour into 9 x 5 loaf pan thinly coated w/ extra virgin olive oil cooking spray.

Spread a thin layer of quick oats on top of the batter.

Cook at 350 degrees for 1 hour or until a cooking scewer or knife inserted in center comes out clean.

Allow to cool for at lease an hour before cutting!

I usually freeze half of it and bring it out after I have devoured the first half (which I keep in the fridge). I store each 1/2's of the loaf in ziplock freezer bags.

Tastes good toasted... you can top it with rice/soy butter and even some cinnamon and sugar if you want. )

I hope you like this... I have been eating it every day for over a year, lol.

This is really incredible bread, Shanna. The first time I made it, I used white flour and walnuts (I had no pecans). My hubby ate it all (except for one slice that I hoarded), then asked for more. I just made a second batch and doubled it -- but this time I used whole wheat flour and raisins (I was totally out of nuts) -- oh, and I also ran out of oatmeal.

We had a taste test, using the one slice of the first batch that I hoarded. The results are mixed; we disagreed completely. He's just WRONG, that's all!

It's not a fair taste test, though, to be fair, because my hubby hates nuts. However, while I don't think it makes any difference in the taste between the white flour and the whole wheat, I do think it needs the nuts, and pecans are sweeter than walnuts, so I'm gonna go for the pecans next time. Don will have to suffer.

I am really glad you like the bread!

I think it's great that you play around w/ recipes -- i like to do the same thing. Especially if I am fresh out of something. )

About those chocolate chips -- BarbaraS posted her banana bread recipe that contains chocolate chips. Sounds yummy also.

The whole subject is surprising to me because I don't usually like banana bread!

I moved to another city and am preparing to study abroad -- so I have been really busy! Plus, the internet isn't as easily accessible as it used to be...

Do you guys like coconut and chocolate chips in banana bread?

Never tried coconut and chocolate chips in banana bread. Not real crazy about coconut (EW), but I'd never say no to chocolate chips (say, maybe THERE's a clue, eh?!?)

As I mentioned, I ain't real crazy 'bout banana bread, so I'm leaving it all for Don -- he LOVES it! I'm gonna make Heather's Lemon Glazed Sticky Bread today. YUM!

When you "study abroad" (Spain?), you'll stay in touch, won'tcha? Huh?

Yes, it would add lots of fat - both coconut and solid chocolate are high fat. You could probably add a total of 1/4 cup of either one (or both combined) and be okay, but I wouldn't add more...
