Fruit Pizza

Ok Maybe I'm having a sweet tooth right about now wanted to share this one with ya all!!

Fruit Pizza

1 roll of fat free sugar cookie dough
8 oz of silken tofu (blend/ whip to make a cream cheese effect)
1/2 cup sugar
1 tsp vanilla
Fruit sliced bananas, kiwi, strawberries, mandrain oranges,
( or your choice of safe fruit for you)
Coconut (optional)
nuts (optional) your choice of safe nuts for you

To keep fruit from turning brown you may use a litttle lemon juice. Cut sugar roll into slices and press onto a pizza pan. Moisten finger to help to spread easily. cook per directions for cookie. Cool. Loosen from pan and place on a round platter. Combine tofu cream cheese whipped, sugar and vanilla. Spread onto cooled cooked crust. Arrange fruit as desired. Top with coconut and nuts.(optional)
enjoy as a snack.

This sounds very yummy! But I have heard that coconut is a trigger and don't forget that the nuts should be chopped up for us to digest them easier!

Mags sugar cookie recipe can be used as a cookie base.

this would look pretty topped with blueberries, rasperries, strawberrries... and maybe some shaved chocolate peices for decor. looks yummy!

if you just sprinkled a spoonful or so over this whole pizza it should be just fine.

I've made this with Rice krispie square base. Make recipe for rice krispie squares and instead of putting in a pan spread on a pizza pan. NO baking on this recipe. Follow with rest of ingreds. pretty good! Sue

That sounds good too. I don't do coconut, but a few sprinkles of nuts would be ok.
