Teriyaki Ginger Shrimp Stirfry

I made this tonight and it was incredibly delicious. It reminds me of REAL chinese food (which if I ate would not be fun later!)

I made this for one, but it can be easily doubled or tripled

5 shrimp (cut into small pieces) **Mine were pre-cooked**
1 zucchini (sliced very thin)
2 medium carrots (cut into small cubes)
1 potato (cut into small cubes)
1 clove of garlic, diced
1/2 C teriyaki sauce
1/2 tsp ground ginger (dry)
1 TBSP cornstarch
1/4 C water

Put shrimp in a bowl with 1/2 of the teriyaki sauce. let stand. Sautee the veggies until soft in the other half of the teriyaki sauce. Add the ginger as well. Cover and let simmer until most of the sauce is absorbed. Add shrimp. Add cornstarch to a cup, add water and stir until disolved. Add to the pan and mix while it thickens. Serve with white rice!!
