This is very good I make it all the time just love it! Enjoy!

Chicken and a Biscuit

2-3 Tbsp Light Smart Balance
1/3 C White Flour + 1 Tbsp
1/3 C Onion (chopped)
1/4 tsp Pepper
1 2/3 C Chicken Broth (use veggy water & Chicken Boullion)
1 1/3 C Plain Soy Milk
2 C Cubed Chicken (I use Chicken Breast sometimes cook it with the butter & Onion)
10 oz Frozen Vegetables (I use fresh carrots, frozen Brocolli & Peas)

Topping:
2 1/4 C Reduced Fat Bisquick
2/3 C Soy Milk

Melt Smart balance. Saute Onion breifly in SB. Stir in flour & Pepper. Add Chicken Broth & 2/3 C Milk; Stir until thickened. Add chicken & Vegetables. (The filling does call for some salt but I usually just add extra Chicken bouillon to taste)
Mix Bisquick & 2/3 C milk until moist. Drop by Tablespoons on filling. Bake 425 degrees for 20-30 min until top is golden brown & filling is bubbly.
