Hi all,

I'm going to Thanksgiving dinner at a friend's church group and offered to bring a dish--they'd like me to bring a dessert or a side dish. And obviously, I want it to be something safe for me to eat. Does anyone have suggestions for a really easy, tasty dessert or side dish that doesn't take much prep time? It needs to feed about a dozen people. And I know they're already planning most of the traditional stuff like mashed potatoes.

Thanks!

There's a thread going on right now about US Thanksgiving. You could look through that and see what people are doing. We talk about the Twice Baked Sweet Potatoes - ridiculously easy, you can even make them ahead - and Heather's Five Minute Pumpkin Pie.

HTH. Enjoy your potluck. I've always been a big fan of Peg Bracken's advice on potluck dinners: volunteer to bring the water for the lemonade.

Thanks. I did look through the thread, but decided on the Holiday Pumpkin Spice Bread from the recipe index. I can't wait to try it out!

and I love Peg Bracken. I stole all of her books from my mother.

Oh, I hadn't seen that one yet - it does look fabulous. Please post how it comes out and how it goes over.

I had to laugh at this - I did the same thing!

I just made the pumpkin spice bread yesterday and it is absolutely fabulous! Instead of 1/2 cup canola I used 1/4 and put 1/4 more applesauce in and it came out great!!!

Oh, great! I was wondering if the proportions of applesauce and oil could be fudged--now I know. Thanks.

in the one from Heather's EFI Cookbook I've had good luck substituting more pumpkin for some of the oil.

...on what amounts of oil and pumpkin you use? I make this bread ALL the time and welcome any opportunity to cut out fat!!
