Hi All,

I've never posted before but since this site has helped me out so much, as have your recipes, I thought that I might be able to give something back with a recipe I love. It's adapted from a Better Homes and Gardens cookbook. Enjoy!

Turkey Chili (serves about 4)

1 tbs extra virgin olive oil
1/3 cup diced onion
1 clove garlic, minced
10 oz cooked turkey breast, chopped into bite-sized pieces*
14.5 oz can diced tomatoes
15.5 oz can dark red kidney beans, drained and rinsed
4.5 oz can mild green chiles, chopped
6 oz can tomato paste
1 1/3 cup water
1 tsp dried basil
1 1/2 tsp chili powder
1/8 tsp allspice
1/2 tsp cumin
1/4 cup red wine vinegar
1 large chicken boullion cube
1/8 tsp black pepper
1/2 tsp hot pepper sauce, or to taste (optional)

Saute the onions in oil in a medium or large pot over low heat; once they're almost transparent add the garlic and cook for one minute more. Add the turkey and cook another minute. Next add the remaining ingredients, stirring well after each addition. Bring to a boil, then turn down to low and simmer for 1 hour. Serve over white rice.

* I buy the precooked Perdue Oven Roasted Turkey Strips to cut down on time. I think that if you cook the turkey yourself you just need to season it with salt.
