Blackened Tilapia

This was really good but very spicy as is! Serve with lots of rice. I used 1 tsp of red pepper & it was still too spicy for me! I'll use less next time.


Blackened Tilapia

4-6 tilapia
2 tablespoons paprika
2 teaspoons salt (used 1 1/2 tsp)
2 teaspoons lemon pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ground red pepper (used 1 tsp, still too spicy)
1 1/2 teaspoons dried, crushed basil
1 teaspoon onion powder
1 teaspoon dried thyme
1 cup unsalted butter, melted (used butter flavored Pam)

Heat iron skillet (used regular skillet sprayed with butter flavored Pam) ) on high 5 minutes. Mix all seasonings in a bowl. Dip fillets in melted butter (sprayed with butter flavored Pam) and coat with seasonings. Place fillets in hot skillet and cook 2 minutes on each side. Watch closely since you are not using all that butter will burn quickly! Enjoy!
