Amaranth or Quinoa Pudding

Amaranth or Quinoa Pudding

2 cups amaranth or quinoa, cooked
1 cup apple juice
1/2 cup raisins (optional)
1/2 cup almonds, chopped fine
1 1/2 tsp vanilla
juice of 1/2 lemon
grated rind of one lemon
dash of cinnamon

Combine ingredients in a large sauce pan, cover and bring to a boil. Reduce heat and simmer for 15 minutes. Pour pudding into individual dessert bowls. Chill. Makes four, 1/2 cup servings.

I tried this the other day with quinoa. It was actually quite nice. Kindof strange texture- this was the first time I've tried it, but it's full of protein so really good cos we're not eating red meat.
Instead of using apple juice I used rice milk, I didn't have almonds either lol so put in a bit of sugar and then some honey after it cooked. It tastes rather porridgy, nice
thanks for posting I didn't realise it could be used as a pudding which is cool.
