Need luncheon Idea

My department is having a pot luck tomorrow and since there isn't anything that is being brought that I can eat, I'm on my own for myself. I want to make a meat meal, using chicken breasts, but of course, no dairy or soy. Does anyone have a great recipe for chicken breasts to feed roughly 8 people, that I can make up tonight?

Any recipes are greatly appreciated. Thanks

What about this? Macaroni,Chicken and Pineapple Salad

I have made this for many lunches and gatherings and it is meal in its own!!

Thanks, it sounds really good. I can't eat it, I can't have any nuts or soy so that leaves me out. I'm finding it really hard to cook, soy is in EVERYTHING. The department would love it, I can still just cook up some chicken breasts for me.

If so, I highly recommend Kree's chicken stew. My non-IBS husband and friends just gobble it up.

Thanks so much, it looks like everyone will enjoy it. I think they're all afraid of what I'll bring because they know I can't eat much. I'll let you know how well it goes over.

Ok, so my chicken stew is cooking in the conference room two doors down, ready for lunch at noon. It already smells delicious and others are commenting on it. I am really excited, I doubled the recipe and still don't think there will be any leftovers for my dinner tonight. I need to learn how to use my crock pot more, I get tired of going home from a 9 hour day of work and cooking.

I'll post after lunch how the stew went over. Once again, thanks.
