It's also really cheap. Hash Brown Pie 4 egg whites 1/2 C plain soy/rice/almond milk 3 1/2 C hash browns (any kind -- I used Southern style) 1/3 C chopped onion 1/4 C fake bacon bits (not sure what brand names are safe -- I used a generic brand made w/ TVP) Preheat oven to 350. Beat together egg whites and soy milk. Season with salt and pepper (about 1/2 t and 1/4 t, respectively). Spray 8x8 pan with non-stick spray. Pour hash browns into pan. Sprinkle onions and bacon bits on top. Pour egg/milk mixture over everything else. Bake 25-30 minutes until set. This was adapted from a recipe on Ore-Ida's website, but as I recall Ore-Ida's potato products are usually very high in fat.
