Chocolate Cherry Upside Down Cake (vegan)

I have this baking in the oven right now. Recipe by e-diets.

It smells soooo good!

Chocolate Cherry Upside Down Cake

Ingredients
1 (21 ounce) can cherry pie filling
2 1/4 cups all-purpose flour
1 1/2 cups white sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1 1/2 cups water
1/2 cup vegetable oil
1/4 cup distilled white vinegar
1/2 teaspoon vanilla extract


Directions
1 Spread pie filling evenly in the bottom of a greased 9x13 inch pan.

2 In a large bowl stir together flour, sugar, cocoa, baking soda, and salt.

3 In another bowl combine water, oil, vinegar, and vanilla. Add these liquid ingredients to the flour mixture all at once. Stir until just moistened. Pour the batter evenly over the cherry pie filling.

4 Bake in a preheated 350 degrees F ( 175 degrees C) oven for 30 to 35 minutes.

5 Let cake cool for 10 minutes in pan then invert cake onto a serving dish and continue to cool.

I'd sub 1/4 cup of applesauce for half the oil if I make it, but other than that it sounds delicious! Adding it to my recipe collection

YUMMY!!!! Very decadent but I got it from my e-diets site so it's low fat.

I will definitely make it numerous times!

Tina this is delish!!!!! I made it last night and topped it with some cool whip. Hubby and I both had to stop ourselves from a second piece. (our first was pretty large to begin with! ) Thanks for a great recipe!!!

Beth I did use the full amount of oil for it. I figure with the size of the cake that it makes and it was big and the fact that I eat a piece after dinner on a full stomach I am pretty safe. And so far I am . But I am sure that you could do half oil and half applesauce and it would still be just as good. I can imagine that the one piece I had contained that much fat. It really is good and tonight I am going to top it off with some Soy Delicious Vanilla ice cream!
