Penne With Cannellini Beans (Makes 5 servings)
You'll never believe anything with only 5 ingredients can taste this good! I was stunned at how delicious this pasta is.
8 ounces uncooked penne pasta (I used mini penne) 2 (14 1/2 ounce) cans Italian-style diced tomatoes 1 (15 ounce) can cannellini beans, rinsed and drained 1 (10 ounce) package baby spinach, chopped (I only used about 4 oz total. Use as much or as little as you can tolerate.) 1/4 cup soy parmesan cheese
Cook pasta according to package directions. In large saucepan, combine the tomatoes and beans, and bring to a boil. Reduce heat and simmer uncovered for 10 minutes. Add spinach, cook and stir for 2 minutes, or until spinach is wilted. Drain pasta, top with the tomato mixture. Sprinkle with cheese.

I took one look at the picture and was instantly ravenous.
One question. When you say "2 cans Italian-style diced tomatoes" do you mean the kind with herbs and spices already added?
