Pages: 1 WW CARROT CAKE       #237657 - 01/11/06 01:07 PM Edit Reply Quote Bevvy Reged: 11/04/03 Posts: 5918 Loc: Northwest Washington State I just made this (see pic below), substituting soy cream cheese, soy milk, and "Egg Beaters." Note that the cake is only comparable to one layer, not a full-size bundt cake, and one serving is one-twelfth of the cake. Nevertheless, it smelled incredible throughout the house, and I'm anxious to dive into it! It contains no dairy, no cholesterol, no lactose, no butterfat, and is only 80 calories per 1 oz. serving. Like I said, I don't think the cake needs it. But I've never been a fan of cream cheese anyway, so I'm not a very good judge. Actually, I didn't care much for the cake at all. I'm used to real gooey carrot cake, and this one tasted too damn healthy! If you're really craving carrot cake, go for it -- but I recommend leaving out the cornmeal and the icing.
