Thanks...however mine came from a whole food store (they dipped it out into plastic containers) so no expiration date and also they did not have it refrigerated so I kept mine in the cupboard all this time!!

It don't smell bad, but Yikes,Maybe I should throw it away

No problem, didn't realize how much fat was in it, but I guess it is oil based

I don't usually make mine with Tahini, only add a little when I think of it. This is the recipe I normally use (I like the zest/spiciness of jalepinos, and it is low fat):

because that's what my mother does! I'd say the only way it could go bad would be if the oil turned rancid, and you'd definitely be able to smell that. I think if you kept it in the fridge it would coagulate too much and not have the right consistency.

The one I use most was sold at my church about 10 years ago, and I think they just had a small book binding place do it. But, I can reccommend the middle eastern cooking bible. Everyone I know swears by: The Art of Syrian Cookery: A Culinary Trip to the Land of Bible History-Syria and Lebanon (Paperback)
by Helen Corey

Check it out on Amazon.com. Most of my mother's recipes come from a combination of this book and my grandmother's tricks.
