Empty the pantry stew

Mac's new favorite thing to make for me when neither of us can decide what to eat. I've been so busy and stressed with school lately (taking a dinner break from writing a paper), he's been cooking a lot for me lately

Any vegetables on hand can be subbed, as well as whatever your fancy for starchy carbohydrate. Cut up chicken could be subbed for the Quorn. For the nights you don't want to make something elaborate, but helps use up what you have lying around!

Makes approximately 2 servings

1 1/2 cups water
1 veggie boullion cube
1 cup of a combination of rice, pasta, and cut up potato
1/2 cup of Quorn chicken tenders
1 cup frozen chopped spinach
1 4 oz can of mushrooms
1/2 cup shredded carrots
garlic, pepper, any other spices to taste

Throw all of the above ingredients in a pot, and bring to a boil. Simmer until rice and pasta are cooked and veggies are suitably cooked. Very hearty!

Melissa, this is awesome. I'd actually eat this (note--I'm really picky, but ultimately really simple!). I'll be making infinite variations of this. (There's nothing I hate in it, either!) It actually sounds like something that wouldn't make me sick.

One quick question: should it be a mono-starch/SF dish or a mix and match one (i.e. rice/potatoe or rice/pasta or rice only or potatoes only, etc. et cetera)?
