I made a huge pot of minestrone tonight and it was delicious AND I got it made in about 1 hour after work. I wanted to post what I did more for the next time I make it than anything.

In large pot heat 1 T oil and saute 1 diced onion, garlic, 2 portobello caps, 2 small zucchini. Add 1 can diced tomatoes with flavor, 1 thawed spinach, some corn, 1 large can stock, 4 c water, rosemary, salt and some fingerling tiny potatoes. Heat until potatoes are almost tender and add 1/2 package small pasta and boil 10 min, add 1 can undrained white beans and some browned turkey with seasonings. Makes a lot! and it is super duper flavorful.

Large can broth is the big one not the 14 oz. Also it works out better to boil the half bag pasta (I use wacky mac) in a pot on its own and drain. I cook the turkey in the soup pot first and then remove and add the veggies. I don't make it with corn anymore. All in all this is a super delicious soup.
