Pear Ginger Muffins

These muffins are tasty (and huge! when made in my 12 muffin tin), with a nice spicy zing of the ginger! Modified from a recipe I found on recipezaar.

2 cups all purpose flour
2 teasp baking powder
1/2 teasp baking soda
1/2 teasp ground nutmeg
2/3 cup sugar
1 tbsp ground ginger
4 egg whites
1/2 cup rice milk
1 teasp vanilla extract
1 tbsp vegetable oil
1/4 cup applesauce
1 16-oz can pears packed in juice, drained and chopped


Mix dry ingredients. Mix wet ingredients in a separate bowl. Combine until mixed, but still lumpy. Spoon into either non-stick sprayed or lined muffin tins. Bake 20 minutes at 400F.

Sounds yummy, I might try it with a fresh pear peeled and chopped.
