Not so much a recipe as a quick dinner idea...

Chicken Poached in Cider

Take a few chicken breasts. Personally, I think they turn out the most tender if they're either thin already or you pound them until they are! Spray a non-stick skillet with some Pam and brown them over med to med-high heat. When they're lightly browned on both sides, add enough apple cider to generously cover the bottom of the pan, sprinkle the breasts with ginger, and throw in a few golden raisins for good measure. Turn the heat down to med-low and cover the pan. In about 10 minutes you have chicken perfect for a chilly Autumn night, and the cider sauce tastes great poured over mashed or baked potatoes.

Further proof that great minds think alike: I've been doing something similar lately! I add a thick slice of apple and a little sprinkle of brown sugar to the top of each breast half... and sometimes I use a half-and-half mix of orange juice and water instead of cider. I couldn't even believe how juicy and tender the chicken is cooked this way!

Yum, brown sugar and OJ do sound like great additions. I'll have to try it your way sometime soon!

I can't find any without HFCS. Can you find any juices in one serving sizes? Would apple juice work the same, ya think?

Beth, do you have any orchards around where you live? Get some fresh cider from them - it'll be nothing but what comes from an apple....

I would think you could use apple juice instead of cider. You'd probably want to use other items to give it more flavor--raisins, apples, spices, etc.

Haha, this morning I got to preview what this recipe would taste like After brushing my teeth with my ginger toothpaste (yeah, i love all things ginger...toothpaste, altoids, you name it), I went and had a glass of apple juice and thought "wow, that tastes pretty good!"

Dried ginger in the spice bottles? Or fresh slices?
