Montego Bay Chicken
1/4 cup soy sauce 1/4 cup orange juice 2 Tbsp brown sugar 2 garlic cloves, minced 1 tsp hot pepper sauce 1 tsp rum extract 1/4 tsp ground ginger or 1 tsp minced fresh gingerroot 4 boneless skinless chicken breast halves
In a large resealable plastic bag, combine the first seven ingredients; add the chicken. Seal bag and turn to coat; refrigerate for at least 2 hours.
Drain and discard marinade. Coat grill rack** with nonstick cooking spray befire starting grill. Grill chick, uncovered, over indirect medium heat for 6-8 minutes on each side or until juices run clear.
** If you dont want to grill, I have cooked them in a pan on the stove. Coat the pan with nonstick cooking spray and dump the whole bag w/marinade into pan. It is better to cook with the marinade, otherwise the flavor of the chicken isn't as strong. The grill tastes the best, though.

I dont have a 'real' grill either - the only time I ever get to taste this on the grill is when I go to a friends house. I bought a little electric one, but it just isnt the same. i might have to buy a real grill just for this recipe!! BTW this is one of my husbands favorite recipes!
