Zippy Shrimp Linguine

This is soooo yummy. I have to omit the red pepper flakes because it makes it too spicy for me.

Zippy Shrimp Linguine

1 pkg (16 oz) linguine
1 lb uncooked lg shrimp, peeled and deveined
2 garlic cloves, minced
1/2 to 1 tsp crushed red pepper flakes (if sensitive tummy - omit)
2 Tbsp olive oil
1 tsp butter
1-1/2 cups sliced zucchini
1 cup yellow summer squash
1 cup julienned carrots
1 cup fresh broccoli florets
1 Tbsp minced fresh parsley
3/4 tsp salt

Cook pasta according to package directions. meanwhile, in a large nonstick skillet, stir-fry shrimp, garlic and pepper flakes in oil and butter for 3-5 minutes or until shirmp turn pink. Remove shrimp; keep warm. Add the zucchini, summer squash, carrots and broccoli to same skillet; stir-fry for 8-10 minutes until crisp-tender. Return shrimp to skillet. Drain the pasta; add to skillet along with the parsley and salt. Heat through.

Hm. Looks tasty! My husband may just have to deal with shrimp for night. (He'll eat it, but it's not high on his list.)

Just remember to use safe margarine in place of the butter! Looks yummy!

I always do...I just didn't mention it in the recipe. Its very yummy...its one of my hubby's favorites! It makes a lot of food, so you will have lunch for at least a day or two!! Let me know what you guys think when you try it!

I made this a little while ago and it did make a ton of food. I omitted the broccoli (not my fave) and added some cherry tomatoes. Tomatoes aren't a trigger for me. It was easy and quick to make. Love that. I added a little soy parm when serving.

I just made it again last night - between me, my husband and our 2 year-old, the leftovers last for 2 days of lunches. I made it different last night (mostly because I got distracted and burned the vegis!). After the shrimp was done, I washed the skillet (to remove burn marks from vegis ) and did another Tbsp of olive oil, another tsp of Smart Bal lt and another garlic clove. I cooked the vegis in it and after I tossed all the ingrediants together I added Italian seasoning to the pasta mixture. It really turned out yummy!
