I just made this, and it was delicious. I'll know if it bothered me in about a half hour, but I think I did everything correctly.

5 cups peeled apples
1 cup packed brown sugar
1/2 cup oatmeal
1 tsp. cinnamon
1/2 cup softened soy butter
Heat oven to 375 degrees. Arrange apples in greased (I used Pam)9X12 pan.
Combine remaining ingrediants in a bowl to make a crumbly mixture. Sprinkle over apples. Bake until topping is golden and apples are tender, about 30 minutes.

It's very sweet. The butter seems like a large amount, but the soy butter usually doesn't bother me. Maybe a substitution would be better for others?

I have made apple crisp and used canola oil to bind the topping. I was able to cut it down. I think I only used 1 TBSP of the canola oil and it turned out really good. I was thinking about melting the soy butter and mixing the topping like that. I think it would work and then you wouldn't need to use so much butter but still have the buttery flavor.
