I didn't think to look under soups! I was totally confused as to where all the chili recipes were when I looked for them under main dishes - haha. I'm such an airhead!

My Chili

Serves 4-6

Originally from a cookbook that came with my aunt's crockpot, but it's been modified extensively since then.

Ingredients:

1 Tablespoon olive oil (or use cooking spray)
1/2 to 1 pound ground turkey
1 large onion, chopped
4 cloves garlic, minced or crushed

2 14-1/2-ounce cans diced tomatoes
2 8-ounce cans tomato sauce
1 6-ounce can tomato paste
1 4-ounce can mushrooms, drained
2 16-ounce cans kidney beans, drained and rinsed

2-1/2 heaping teaspoons chili powder
1-1/2 teaspoons cumin
1 heaping teaspoon oregano
1 teaspoon coriander
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
2 bay leaves

Directions:

Brown meat in a non-stick skillet with oil or cooking spray, being sure to break it up into small chunks. Transfer meat to a stockpot (or any large pot.

Saute onion and garlic in same non-stick skillet. Transfer to the stockpot.

Add all the other ingredients to the stockpot and stir well. Bring to a gentle simmer and simmer for at least 1/2 hour.

Notes:

This makes a fairly spicy chili. If you prefer it milder, try cutting the spice amounts in half.

I've also made this with just 1 can of kidney beans and lots (at least 1 cup) of fresh chopped mushrooms.

My Chili

2# ground turkey breast
2 large onions, chopped
3T. minced garlic
1/2t. each salt and pepper (or to taste)
3T. tequila
1 can whole tomatoes (chopped in can a little) or diced
1 1/2 cans tomato sauce (can add last bit if needed)
1 can tomato paste
1T. paprika
1T. oregano
1t. chili powder
4 small red chilies, chopped, preferably serrano
2 cans drained dark red kidney beans
Brown meat with onions and garlic. Add remaining ingredients in a crock-pot or dutch oven and heat gently as long as desired. Add beans later if desired so they don't get mushy.

Dh still raves about this. I make Heather's simple sweet cornbread in a cast iron pan with it. I threw that meal together on Thursday in about 45 min!

It doesn't make sense to me why it's always classified as a soup either! I just put it there, because that's how most cookbooks list chili - under soups.
