Some of my "On the Spot" Recipes

Just some things I've thrown together. I am a big fan of quick recipes that don't require too many ingredients, so a lot of these are perfect for adding in or substituting ingredients!

Eat Your Peas Pasta

- Bowtie Pasta
- Frozen Peas and Carrots mix
- Small can of chopped olives
- Garlic Powder
- Fresh Ground Pepper
- Bread Crumbs
- Red Wine Vinagrette
- Soy Parmesan (Optional)

- Boil Pasta (add in peas for the last 6-8 min)
- Drain and rinse with cold water
- Return to saucepan and toss with Vinagrette and desired amount of olives
- Generously sprinkle garlic Powder and Bread crumbs
- Add fresh ground pepper (I used a little salt too)
- Sprinkle with Soy Parmesan if desired



EEEEEASY Chicken N' Veg Roast

- Boneless Skinless Chicken Breasts (I had 3, so adjust recipe if needed)
- 1 Can of Chicken broth
- 3 Large Potatoes
- 5 Carrots
- 1 Onion
- 3 Celery Stalks
- Garlic Powder, Onion Powder, Seasoned Pepper, Seasoned Salt (And any others you would like)

- Generously sprinkle breasts with seasonings
- Arrange side-by-side in a baking dish (I used glass)
- Pour in Chicken Broth until submersed almost all the way
- Cut vegetables into large chunks
- Place veggies on top of, and around the chicken
- Bake at 400, for about an hour (Or until thoroughly cooked)

This ends up with so much flavor! Very Yum!


Catfish Po'boys

- 2 Catfish fillets
- 3/4 C Bread Crumbs
- 1/4 t Cayenne Pepper (More if you like spicy)
- 1.5 t Garlic Powder
- 1/4 t Salt
- 1 Tomato
- 1 Lemon
- Safe Mayo
- French Baguette
- Ziploc Storage baggie

- Pour Breadcrumbs and seasonings into ziplock (You can taste test the mixture with your finger. Add more of something if you think its lacking)
- Add fish and seal; Shake until covered with seasonings
- Lightly spray cookie sheet
- Place fillets on sheet, and back at 350 for about 16 minutes (8 on each side)
- Slice Baguette and hollow out the top piece
- Mix squeezed lemon juice into mayo; and spread onto bread
- Add fish and sliced tomatoes
- (Jeremy puts dill relish on his and loves it, but thats up to you )
- ENJOY


Berry Easy Spread

- 1/2 C Frozen Blueberries
- 1/2 C Frozen Strawberries
- 1/2 C Applesauce
- A drizzle of Honey

- In a small foodprocessor, add all ingredients and mix until blended, but slightly chunky.

* I spread this onto a toasted bagel with RF Peanut Butter! A great way to incorporate some IF!


Chicken N' Rice Salad

- 2 Boneless Skinless Chicken Breasts
- 1/2 C White Rice (5 minute rice)
- 1/2 C Brown Rice (5 minute rice)
- Premixed Lettuce
- Chopped Celery
- Italin Dressing

- Lightly spray skillet
- Cover and cook chicken over medium heat for 10 minutes (5 on each side) *If it starts to stick, lift up and spray a little more
- Meanwhile, bring one cup of water JUST to a boil
- Add white and brown rice, remove from heat, and cover for 5 minutes
- When chicken is cooked, cut into bite-size cubes
- Toss Chicken, Salad, Celery, and Dressing
- Add rice over top, and mix
- Salt and Pepper if desired



This is all I can think of at the moment. I'll post more as soon as they pop back into my head! I hope you guys like them!

Thanks for posting these recipes! They all look really good--especially the Eeeeeasy Chicken n' Veg Roast. I'm an impatient cook, so this looks like something even I could manage.

Hahaha mee too! I'll find a recipe on here that sounds fantastic, and I'll go home and just absolutely destroy the kitchen while cooking it (which ends up taking me about 2 hours), and finally I finish and eat it within 15 minutes .. only to mosey back on into my disastrous kitchen .. which .. now needs to be cleaned. Then I end up resenting my meal b/c "LOOK AT THE MESS THAT IT MADE". *Deep breath* Needless to say, my boyfriend has dish duty now

I made this again today, but I left out the potatoes and made mashed potatoes as a side. I didn't have chicken broth, so I used vegetable broth. It was just as delicious! And no leftovers!
