WW CHICKEN POLENTA LASAGNE

Hi - My sister just emailed me some of her WW recipes. I thought I'd pass them along to all of you.

WW CHICKEN POLENTA LASAGNA (4 serv/5 points ea serv)

1-1/2 c FF pasta sauce
8 oz. FF polenta (in a roll) cut into 1/4" slices
8 oz. cooked, shredded chicken breast
1/2 c soy mozzarella grated

Preheat oven to 350.

1. Spray an 8x8" glass baking dish w/cooking spray
2. Put 1/2 c sauce on bottom of dish
3. lay half of polenta in single layer over sauce
4. put half of shredded chicken on top of polenta
5. cover with 1/2 c sauce
6. sprinkle w/ 1/4 c grated mozzarella
7. begin layering again (polenta, chicken, sauce and ending w/mozzarella on top.

Bake for 30 min.

I have decided to make a few recipes - I honestly never paid much attention to the recipe section - but my goodness what normal food you are all supplying here. I have found the IBS cookbook to have a quite a few exotic foods in there, but this is wonderful.

Oh and now why they call you the Recipe Goddess LOL. You definately work hard to earn that title though.

Anyways - what is Polenta....I don't think we have that in Canada. Can you tell me what it is?

LM - Polenta is a dish made from corn meal, usually cooked on top of the stove with water, salt and butter??? added. It's kind of a mush, so to speak. Actually, you can buy it at the grocery store in a tube. They have different flavors such as sun dried tomato, mushroom, etc. it's already been cooked and formed and all you hve to do is slice it and either put it in the oven to warm or in a non-stick fry pan and flip it a few times and maybe put some pasta sauce on top with some soy parmesan and use it instead of potatoes or pasta. I like it, but my husband isn't crazy about it.

I do try hard to keep my title, but some day somebody's gonna show me up! I've had a lot of years to gain all the knowledge I have about food--my Mom was a food Maven and since I was a young girl, I loved to be in the kitchen with her just watching her prepare food and asking questions.

Hi everybody - I posted the Chicken Polenta Lasagne recipe last week and I made it last night. The real test is:

WILL DAN (MY HUSBAND) LIKE IT?

He loved it. I also added some Yves Veggie Ground Round Original flavor and he didn't even notice. He also didn't notice that it had ALL SOY CHEESE in it. I'd say it was a keeper for us (and so is he if he behaves himself!)

Hello my friend! Once again posting a terrific sounding recipe! Are you shocked that I am commenting on a cooking recipe, when normally it's baking ones? I might just have to make this for my fiance when I fly over to see him in June in the UK (depending on if I can get all the ingredients), otherwise you can bet I will be making it once he is over here! I finally bought a roll of polenta last week and plan on cooking some of it up next week. Do you think I could get away with using TVP instead of chicken in this recipe?

If anyone has made this... how did you cook the chicken before shredding? boil, broil, bake? Just wondering the best way to get the right flavor and texture....

What does FF mean? I have had IBS since college. I am now 35, and my doctor never told me about a special diet. He put me on Levbid/which didn't work, Nexium for my acid reflux, and told me to eat small meals through out the day, and not to eat spicey foods. Never did I know about all the "trigger" foods. I knew I have been in pain for years! I found this website 2 days ago, and have been pouring over it. I am sure I will have plenty of ?'s for you all!

Weight Watchers. Sharon got many of her recipes from WW cookbooks as they're usually very low in fat.
