Baked Peach Oatmeal
(Makes 4-6 servings)



Somehow I didn't end up posting this here! I ate it this morning and it reminded me how fabulous it was, so I had to share. This is my favorite breakfast during peach season! It's sweet and comforting, and so easy because it can be made the night before and just popped in the oven in the morning. This recipe is from the Churchtown Inn in Churchtown, PA, although I modified it slightly.

1 1/2 cups soy milk
1 tablespoon vanilla
4 egg whites or 1/2 cup Egg Beaters
2 1/2 cups quick oats
1/2 cup brown sugar
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
2 tablespoons margarine, softened
1 cup fresh peaches, chopped (You could also use frozen or canned if fresh peaches aren't available)
vanilla soy or rice milk

1. Whisk together soy milk, vanilla, and eggs until well combined.
2. Add quick oats, brown sugar, baking powder, cinnamon, and salt; mix well.
3. Stir in margarine and peaches.
4. Pour into 8x8-inch baking dish; set at least 3 hours or overnight in refrigerator.
5. Place cold dish in cold oven; set oven to 350 degrees and bake for 25 to 30 minutes, or until oatmeal is puffed and golden brown and a toothpick comes out clean.
6. Let cool 10 minutes before serving.
7. Serve in individual bowls with enough vanilla soy or rice milk to moisten but not to make it mushy!

This looks so great! Thanks for sharing. I am going to try to make it this weekend for our Labor Day gathering. I love peaches!

This sounds so yummy but I was wondering if you don't eat it all will it store ok in the fridge? Then do you just reheat it when you want more?? Can't wait to try it on a cooler day soon!

Yes, it reheats fine. I have some in my fridge now and am planning on having it for breakfast tomorrow.

Oh yummy! So, is this cut a piece out and eat it like bread consistency, or more like spoon it into a bowl consistency?

Well, funny you should ask that. The first time I made it, it turned out more like bread, but this time it was mushier. I liked it both ways! I don't remember how long I baked it last year, but this time I baked it the minimum 25 minutes. I would say if you want it firmer, bake it 30 minutes or more!

I made this yesterday morning, left it in the fridge overnight to set... delicious ... Had it again this morning. I think it was better warm the first day. Mine came out exactly how I wanted it ... like a muffin. I'll try warming it tomorrow morning.
