fat-free spaghetti sauce

I bet you thought I didn't have any recipes of my own  . Well, actually, I do! This spaghetti sauce is great for a Saturday afternoon, and the long cooking means that the vegies are pretty well broken down.
Fat-free Spaghetti Sauce
4 to 5 cloves garlic, peeled and pressed
1 large onion, peeled and chopped
1 large red bell pepper, seeded and chopped
Saute in water until onion is translucent. Add:
8 to 10 dried shiitake mushrooms, reconstituted, stemmed, and quartered, including liquid
3 28-ounce cans whole tomatoes, cored and quartered, including liquid
1 bay leaf
Basil, marjoram, oregano, tarragon, and thyme to taste, crushed together in mortar
Salt and pepper to taste
Simmer, uncovered, over lowest heat for 4 to 5 hours, stirring occasionally. Serves 6 to 8.

You're welcome, I love knowing that others can use my recipes (and vice versa). I just wish I had more to share...a lovely-looking lentil and potato casserole recipe came my way today, I'll pass it on once I've had a chance to try it.
