Lowfat Mock Deviled Eggs
6 hard-boiled eggs 1 teaspoon sugar 1 tablespoon white vinegar 1 can (16-oz) garbanzo beans (chickpeas) 2 tablespoon low-fat mayonnaise 2 tablespoons soy sour cream 2 tablespoons yellow mustard 2 tablespoons minced green onion 1/4 teaspoon ground paprika
Remove shells from eggs. Halve eggs lengthwise; remove and discard the yolks. In a small bowl, dissolve sugar in vinegar. Rinse the garbanzo beans and drain thoroughly.
In a food processor or blender, combine garbanzo beans, sugar-vinegar mixture, mayonnaise, sour cream and mustard and process until smooth. Spoon mixture into egg whites or fill using a fluted pastry bag. Sprinkle with green onions and paprika and refrigerate until ready to serve.
Makes 6 Servings Serving Size: 2 filled halves

I missed eatting deviled eggs and since my fiance loves just the yolk filling, I won't have those going to waste now when I eat the whites. Thanks so much for the recipe. You are awesome!!!!
